Truth Be Told brings chef-driven tasting menu and cocktails to Roswell

Marcus was initially called in to help with the menu, something he has been doing since his previous restaurant Watershed closed in 2019. However, when Yu asked if he would be interested in working as chief chef, Marcus agreed—but only if everything was made from scratch.

Marcus collaborated with a number of nearby farms and meat suppliers, including Vice Kitchen, Bremen Farms, and Oliver Farm Artisan Oils.

Savannah-based bar consultant Ryan Smith created the cocktail menu, which will feature both domestic and foreign spirits. Marcus stated, “Expect Truth Be Told to be a twist on traditional cocktails, such as a clarified bloody mary.”

Three often changing nibbles are served first on the tasting menu. A gougere churro with gruyere cheese whiz and hot Cheeto dust, a chicken skin cracker with egg yolk mousse and lemon pepper caviar, or a bagel nibble with dehydrated tomato wine meringue, Mexican oregano, and Parmesan cheese powder are a few examples.

A variety of crudités, including baby beets, radishes, carrots, and tomatoes, are served with rye crumble and goat cheese spread for the second course. They are prepared with a little vinegar and green peanut oil. A bread course comes next, after which the diner chooses from the alternatives on the menu for the next meal.

Corn agnolotti, Georgia wagyu tongue and tri-tip, and alligator ribs with eggplant and nasturtium are among the dishes available. Seasonal sides accompany the mains. Anticipate delicacies such as blueberry ganache and foie gras panna cotta.

Yu preserved the entryway’s original pine flooring in an effort to respect the ancient building’s legacy. There are 50 seats outside on the porch and veranda, and another 50 inside in three separate dining rooms.

Open from 5 to 9 p.m. is Truth Be Told. Wednesdays through Thursdays, Sundays, and Fridays and Saturdays from 5 to 11 p.m. The tasting menu requires reservations.
